These coconut waffles look incredible! I love the idea of the strawberry rhubarb compote balancing the sweetness—such a classic spring/summer combo. I tried making something similar last weekend for a brunch with friends, and while the flavor was great, I struggled to get the waffles crispy enough. It’s probably my technique, but I also realized my photos turned out so dull that I didn’t even want to post them. Since I sell at a local farmers market, I’ve been looking into ways to make my baked goods look more appetizing online, and stumbled across AI product photography for food brands which seems like a fun way to test that. Definitely trying your compote recipe next time!
