These coconut waffles sound incredible! I love the idea of using coconut milk in the batter for extra richness, and pairing it with a tangy strawberry rhubarb compote is pure genius. I actually tried making a similar fruit topping last summer, but never thought to add the waffles themselves. By the way, if anyone reading this enjoys bringing creative characters to life the way this recipe brings flavors together, I recently found a fantastic free OC maker for anime designs that’s been a lot of fun to play around with. Definitely saving this recipe for my next lazy Sunday brunch!
