Grilled Pineapple with Coconut Ice Cream and Caramel

Yield: 4 servings
  • 6-8 fresh Pineapple Slices
  • 3-4 fresh peaches, cut in half
  • 1-2 tablespoons rum (coconut rum if you have it; optional)
  • ½ pint coconut ice cream
  • ¼ cup caramel sauce
  • toasted coconut flakes, for topping
  1. Heat up your grill for 10-15 minutes.
  2. Place your pineapple slices and peaches on the grill. Grill on each side for 2-3 minutes until your desired consistency.
  3. Brush the warm grilled fruits with rum (optional).
  4. Plate the grilled fruits and top with a scoop of ice cream, caramel sauce and toasted coconut flakes.
