This recipe seems a bit off. I tried making these with every ingredient weighed to the gram. - The macaronage takes significantly more than 25 folds just to even marginally incorporate the dry ingredients into the merengue, let alone to get the right consistency of the batter before it can be piped.
- Once achieving the stereotypical "lava-like" consistency of the batter, it was still so loose that piping it was nearly impossible without stringing batter between the shells.
- There was still so much air in the batter that all of the shells ended up completely hollow with no rise at all. They looked like white snickerdoodles, that all cracked.
- The bake time is also too long. Most macarons are baked for 12-13 minutes, so 15-20 is very long. At the 15 minute mark, they were all browning and crisping up.

Hi Kristina, I am sorry to hear that. It is hard to troubleshoot that. I have gone over the meringue recipe and it seems accurate to me. The only thing I cna think of is perhaps the sugar is not dissolved in the first step of the recipe.

OK, so I had a trouble making the macaron shells. They definitely cracked a lot. Had a couple turn out beautiful. I’ve tried the meringue filling twice. My meringue will not set up. Any reason? Cannot get peaks to save my life. I have reread and reread the instructions to make sure I was doing it correctly. I’ve never had this problem making meringue before. Are the instructions that are printed actually correct?

Hi Kristina, as you know macaron making is finicky. some recipes are successfull with resting and others not. I say do what works best for you and letting them air dry usually doesn't hurt.
