I had to make you a smoothie!! A healthy mixed berry-pineapple smoothie for a healthy start to the New Year.

To be honest, I am a smoothie junkie. Can I say that? Whoops! But seriously I am. I have broken a blender on my smoothie addiction. I make and drink smoothies all year round. I don’t care if it’s cold (oh baby, it’s cold outside right now), hot, perfect or steamy. I love me a glass of smoothie. And it is always fruity.

I was late to the addition of greens (kale, spinach, lettuce etc) to my smoothies but I started coming around a few months ago when I realized they can be delicious (and packed with lots of vitamins!!). This mixed berry-pineapple smmothie is one of my favorite ways to sneak in some greens into my morning drink (and trick Mr J in the process too). With 2 cups of spinach hiding in there, the tropical flavors of pineapple and coconut steal the show and make this smoothie a cup of bliss!

Ingredients

  • 2 cups baby spinach
  • 1 cup frozen berries
  • ½ cup frozen pineapples
  • ½ cup Greek yogurt
  • 1 tablespoon peanut butter or almond butter
  • ¼ cup dark sweet cherries
  • ½ cup coconut milk
  • 2-3 tablespoons agave nectar (or maple syrup) – Optional
