He loves coconut and pumpkin so I knew this would be nice. I used fresh pumpkin I froze from around the holidays. This was basically my first attempt at a pie and it turned out beautifully! He said it’s better than this fancy bakery near us. His birthday sometimes falls on Thanksgiving and his mother always buys him one of those pies. Not anymore! I’m thrilled to be able to make him such a lovely pie for him. Thank you!
