Thanks so much for posting this delicious soup! It's a really nice combo of flavors and very forgiving. I kept the basic ingredients the same although I had no broth or coconut milk, so I just used water. I did change the technique a little since I started with a different recipe (i.e., baked the sweet potatoes, but sauteed the onion, some fresh garlic, fresh ginger -- then added the other spices, water, potatoes before blending.).. Oh and I used a bit of butter to compensate for the missing coconut milk :) It was easy to put together and really tasty. I'll be making it again - so thanks again for sharing!
(And the pictures of your food are beautiful, I look forward to trying more of your recipes)

This recipe is amazing!!! I had bought sweet potatoes hoping to make soup when I came across your recipe. I threw everything (minus the coconut milk) in the instant pot for 10 minutes and then blended it up and added the coconut milk. So delicious!!

Thank you, I was just about to ask the same question. I agree, should freeze OK with coconut milk, dairy cream separates/curdles sometimes when frozen. Glad I came across your blog, looks like a great recipe, I'm a huge soup fan!

I haven't tried freezing it and so I cant speak about that. However, I see no reason why you shouldn't be able to freeze it.
