Hello Deb, I haven’t tried this recipe but your plan should work. I always keep it at room temperature for at least an hour.

Can you prepare it up until the bread is shaped and let it proof overnight in the fridge, then bake in the morning? If yes, would you leave it out of the fridge for about an hour before baking?
