Hi Sandy, I hope you get to try this. I do agree to overwhip the eggs or over mixing once you fold things in could deflate all that air you beat into the eggs. Also, as far as uneven baking go, make sure to evenly spread the batter in the jellyroll pan. This will help with the uneven baking.]]></description>
