In reply to Helen. Always mix your coconut milk before measuring. This ensures you get the full fat of coconut milk and water. I use Goya coconut milk just because it is what I find easily in the store.

Hi! This recipe looks amazing! Can I just ask what coconut milk you use in the recipe for the sponge? Do you measure out 1 cup of the cream only from a tin of full-fat coconut milk, or do you mix the entire tin with the water contents first and measure out 1 cup after that?

In reply to Rachel. Sorry, I saw this late but for the whipped cream frosting I prefer to use it the same day. However, in a pinch, It would hold up overnight in the fridge.

I’m not sure if you’ll answer in time for this to be helpful () but how long does the frosting hold up? Trying to figure out if I can assemble tonight for tomorrow afternoon or if I have to wake up early and do it in the morning!
