Do you mean with a meringue topping? Absolutely! you can for sure. You can use the recipe for meringue found here: https://aclassictwist.com/blood-orange-meringue-pie/
Feel free to add some coconut extract to the meringue as well.

I LOVE this recipe! I’m trying to learn to cook a few of our favorite sweet things and wondering if I can make this pie with meringue? I certainly don’t want to lose ANY coconut flavor and not sure if meringue can be flavored with coconut and/or how to do this. I’ve never made, baked meringue but as a child saw it often, missed the opportunity.
