In reply to Judee. Yes, I usually squeeze the juices out of the zucchini to reduce the liquid coming into the recipe.

I make this often but why does it sink in the middle? Am I’m supposed to squeeze most of the zucchini before adding?

I first felt the same way too about adding zucchini in baking. But I’m glad those days were over ever since I made zucchini pancakes. This coconut lime zucchini bread sounds fantastic and I cant wait to bake this.

I have been piling up zucchini recipes for when summer comes round here in NZ and this one has gone to the top of the list!

Like some others have said this is a classic Zainab flavour combo and didn’t realise it was another guest post until I clicked through!
