I first felt the same way too about adding zucchini in baking. But I’m glad those days were over ever since I made zucchini pancakes. This coconut lime zucchini bread sounds fantastic and I cant wait to bake this.

I have been piling up zucchini recipes for when summer comes round here in NZ and this one has gone to the top of the list!

Like some others have said this is a classic Zainab flavour combo and didn’t realise it was another guest post until I clicked through!

Beth, this looks ridiculously good. A thick slice of citrus zested and coconut studded zucchini bread? Heck to the yes girlfriend! Your friend would’ve loved this and kudos to you guys for zucchini noodling! I’ve always wanted to try that 🙂
