Hi Kerry, the cornstarch does make the cookies very soft and gives it that melt-in-your-mouth texture. However, the cookies should not crumble upon touching. U need to let them cool completely on the baking sheet to hold form. After that, you can easily move them. I did find also that pushing too hard in the middle to create the space for the filling crushed some of mine I made recently. ]]></description>
