In reply to Laurene. Feel free to roll it to any measurement you like. The 2-inch gives me thicker cookies which I like, but you don't have to have them that thick.

In reply to heidi l casavant. I’m having the same question. Two inches thick, then cut with cookie cutter? I don't have a cookie cutter than is 2 inches deep. I’m guessing it’s 1/2 inch thick?

In reply to heidi l casavant. You roll out the cookie dough and then cut them using a cookie cutter. I happened to use round cookie cutters, but you can use any shape you have.

In reply to Maggie. Hi Maggie, sorry I am not sure what the texture of the cookie would be if you use all-purpose flour instead of almond flour. You could experiement but may not be worth it since I assume this is for the holidays! I'd recommend looking for another shortbread cookie that doesn't use almond flour.

Have a tree but allergy in the family…can we substitute more regular flour for the almond flour?
