Roasted Fig & Ginger Ice Cream
A dairy-free and vegan ice cream combining the wonderful flavors of roasted figs, coconut and ginger.
TGIF!!! This week has raced by really fast and this girl is still running behind on everything she has to get done by the end of the day today at work. So here is a quick and sweet note on this wonderful roasted fig & ginger ice cream!!
Remember when I went to Boston a few weeks ago? (See it here!) And I told you I bumped into a farmer’s market as I was walking around the city? Well, I bought some figs (and limes since there is a shortage!!) and I was so excited because I’ve been hunting figs and rhubarb at my local farmer’s market for weeks and could not find neither. When I returned from my trip, the first thing I made with my figs was this ice cream!! It’s a dairy-free, vegan (if you use agave instead of honey) and gluten-free treat that will just make your tastebuds dance for joy!
Why? Because, roasting figs with brown sugar, ginger and lemon zest does something wonderful to them and it extracts the bold flavors of the fruits. I blended this roasted puree with some coconut milk and honey (or agave) to make the ice cream base. That’s right, no artificial sugars either. It is so incredibly creamy and delicious, I need to just give you the recipe so you can try it!
