Coconut Apple Bread with Caramel Glaze
You knew I had to make coconut apple bread, didn’t you?? Apples and coconut!! Well, coconut and anything seems to be my mission in life and so far I have yet to meet a flavor that does not go with coconut. Although I haven’t tried coconut and bacon who knows, that could be epic like this easy coconut apple bread that’s going to be one of my holiday favorites.
Quick breads are the best!! They are really just cake for breakfast or a coffee snack but with fruits in them. Who can say no to that? These chilly fall mornings and upcoming holiday gatherings need something special beyond toast and apple butter (although yum!!). A slice of this bread with a cup of coffee will be perfect as we start entertaining family this season and catch up on life.
It’s moist, filled with fresh apple chunks, coconut flakes, and crunchy pecans or walnuts.
Amazing texture all around and it’s perfectly spiced too! Topped with a sweet caramel glaze, you do not want to miss out on this wonder. I promise!!
Especially that it is a great gluten-free option for your family and friends that have gluten intolerance.
I made this apple bread gluten-free by using Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. I love using this flour in place of wheat flour when I want to make one of my recipes gluten-free. I am still learning about GF baking but this flour makes it easy to experiment with. It is perfectly formulated for baked goods with terrific taste and texture – no additional specialty ingredients or custom recipes required.
Grab a cup of coffee, a slice of this coconut apple bread, and enjoy your day! Happy baking friends.

I love Bob’s Red Mill flours, and the 1:1 sounds so easy to make baked goods gluten free! The flavor combination going on here sounds delicious, too! I’ve never combined coconut and apple…can you believe it? 🙂
The 1:1 is seriously my favorite. Marcie you need to get on that apple and coconut train…for real!!
I have the same mission as you when it comes to butternut squash and sweet potato. Lovely recipe as usual Zainab and I have pinned it ti make one day.
Thanks Bintu!
I love that this is gluten free! It looks so good 🙂
Thanks Ashley!
Oh this sounds absolutely amazing! I love coconut and I love apple but I don’t think I’ve ever had the two together! I can always convince myself that a quick bread for breakfast is basically healthy, I mean, they usually have fruit in them 😉
You can always convince yourself!
I keep meaning to pick up Bob’s gluten-free baking flour to use for my mom and sister! I need to make it happen this holiday! And this bread! Coconut and apple sound fantastic together!!
Thanks Ashley!

Of course! I hope you like it!
I have tried apple coconut pound cake before and it was delicious. Like this with caramel would be even better 🙂
I feel like I need that pound cake recipe.
I never wouldn’t thought to put apples, coconut, and caramel together, but what a wonderful combination girlfriend!
Thanks Sarah!
Devout Bob’s Red Mill lover here!!! GF baking is a skill I’m learning too; we think husb has sensitivities to gluten?! Yikes!!! He would love this!!! Thanks for sharing !!
I am learning too!!
I so need to see if I can get this flour mix here! GF seems to be the way to go especially since there’s going to be so much indulgence in these 2 months! So excited for the Holidays! Also, this bread looks stunning. Couldn’t agree with you more – Coconut basically goes with everything under the sun! Love this combination with apple and that glaze is making me DROOOOOL!!!
I wish you can get the flour…it makes GF baking easier.
