Happy Friday! I hope you all had a great week. It was a fast one for me as I prepared for a meeting with my PhD committee members. That’s all done now and I am ready to jump into the weekend!! What are you doing this weekend? I have a friend visiting that I am very excited to meet…for the first time!!
We started the week with a delicious breakfast smoothie, this very berry coconut smoothie, and it is only fitting we end it with another healthy nutritious breakfast recipe. This amaranth pudding with hazelnuts and berries is a grain-tastic breakfast that is flavorful and filling.
But let’s back up for a minute. Are you familiar with amaranth grain? I was not. It is one of the whole grains from Bob’s Red Mill that I recently discovered and it is quickly becoming a favorite. Itโs an ancient grain that is high in protein and contains all the essential amino acids. It is also high in fiber and a powerhouse of a grain that is perfect for gluten-free and vegan diets.
I made this easy pudding with some almond milk but feel free to use coconut milk for added flavor and I summer-ized it with some fresh berries. Amaranth is very common here! We get lots of sweet stuff with amaranth that is especially eaten during festivals! Massive laddoos {sweet fudgy balls} and chikkis {pralines} made of amaranth are very popular here and very tasty!!! I never knew amaranth could be used to make a pudding!!!! This is sooooo amazing I need to try it stat!!!!!!!!

More committee meetings? Fun fun ๐ we really need to have a chat sometime soon about our PhD experiences because I feel like we’re a rare breed in this corner of the blogosphere! Also, I am getting to be a granny because I think I love more mushy/pudding-like foods now than I ever did before….there’s seriously something wrong with this regression, but I really can’t help it. YUM!
Ala I know!! We need to compare notes soon. I shall email you soon. I had a committee meeting last Friday and it is postulated that I may finish in May next year although one member in the group thinks it’s impossible. But we meet in 6 months to reassess. The joys of having your life in the hands of 4 PhD members.
I tried amaranth once and thought it tasted kind of like dirt. But yours looks amazing and I really want to like amaranth, so I’m heading over for the recipe to try it out.
