Blackberry Popsicles

It’s hard to believe the warmer months are right around the corner. Plenty of endless summer nights making memories, playing outside, or sitting by the pool are ahead. There is always one essential snack you need to whip up with your kids when it comes to hot days! The best part? It’s only 3 ingredients. Let me introduce you to these Blackberry Popsicles.

There is nothing better than a nice cool snack or dessert on a hot day. These Blackberry Popsicles will keep you hydrated and are an oh-so-yummy snack.

So just how do you make these easy popsicles? The first thing you want to do is order these molds I used on Amazon if you don’t already have popsicle molds. I’ve had mine for a few years now.

Grab your lemon juice, vanilla greek yogurt, and frozen blackberries. It’s really all you need for these Blackberry Popsicles. 

First up, grab your blender! Add your blackberries, 2 cups greek yogurt, and blend until smooth, about 30 seconds if using a high-speed blender. Once you’ve blended all your ingredients together you can just set them aside. It can’t get much easier!

In a medium-sized bowl, you will want to whisk lemon juice and 1 ½ cups of greek yogurt. Then you will grab your molds and layer the popsicles as follows: 2 tablespoons blackberry mix, 1 tablespoon lemon juice mix, repeat over and over until your molds are filled. 

Before putting them in the freezer, gently tap the molds to remove any air bubbles, then insert the popsicle sticks, and then freeze for at least 5 hours or best overnight.

Now you are probably wondering just how to remove the frozen popsicles from the molds right? Don’t worry. It’s so easy. All you have to do is run the mold warm water for about 10 seconds or allow them to sit at room temperature for about 5 minutes.

Ahhh, now you and your family can enjoy these delicious Blackberry Popsicles and keep them on rotation. You will absolutely want to make them over and over on those warm days! Keep in mind there are a  few substitutes if needed. You can use fresh if frozen blackberries aren’t available or if you prefer. If you want a sweeter popsicle, reduce the lemon juice and replace it with your favorite sweetener or apple juice.

  4. Gentle tap the molds to remove any air bubbles, then insert the popsicle sticks and then freeze for at least 5 hours or best overnight.
  5. To remove the frozen popsicles from the molds, run the molds through warm water for about 10 seconds or allow them to sit at room temperature for about 5 minutes.

Notes

If you want a sweeter popsicle, reduce the lemon juice and replace it with your favorite sweetener or apple juice.

If frozen blackberries are not available, use fresh.
