Cherry Plum Hazelnut Galette {Gluten-Free}
A delicious, rustic stone fruit summer galette with cherries, plums and a flaky hazelnut crust!
You guys, we are almost done with July which means summer is already half-way gone. Can you believe that? How’s your summer been? I hope you have been enjoying the heat, frolicking in the parks or at the beach and of course grabbing lots of the fresh fruits flooding local farmer’s market stands. I wish I was having a wonderful summer time outdoors but I spent the past 4 weeks heavily revising my paper for submission. Thankfully, I sent it off to the editors on Friday and I can now have a summer (at least until their reviews come back)!
During my nerdy days, I’ve especially been focused on the fresh fruits part of summer and I’ve been eating way more than my fair share. Those that don’t make it into my morning smoothies or fruit bowl snack in the afternoon, eventually get baked! Like this cherry plum hazelnut galette which was a product of left over cherries and plums.
I’m seriously in love with galettes this summer. This is the 4th galette I’ve made this month. They are just so easy to make, rustic and delicious with summer’s juiciest fruits as filling. This time around I used cherries and plum (a combination that might sound bizarre but is totally amazing, I promise!) and wrapped them in a flaky hazelnut thyme crust. I love using Bob’s Red Mill hazelnut meal/flour to add the wonderful texture and health benefits from hazelnuts to my baked goods. Like it’s well known counterpart, hazelnut meal is earthy, nutty and incredibly flavorful. Naturally gluten free, hazelnut meal is a perfect addition to pie crusts, macarons or cookies as it brings a rich buttery flavor to the crust and pie.
With a hint of thyme in the crust and fresh lemon in the filling, the complex flavors of the combination of cherries and plums comes together wonderfully in this summer galette. Slightly nutty, this stone fruit galette is rustic and earthy (thanks to the hazelnut meal) which inspired these vintage pictures. You seriously have to make it soon!! It’s perfect for picnics, summer entertaining and date nights.
Cherry Plum Hazelnut Galette {Gluten-Free}
A delicious, rustic stone fruit summer galette with cherries, plums and a flaky hazelnut crust!
Ingredients
For Crust:
- 1¼ cup gluten free all-purpose flour
- ¼ cup hazelnut meal/flour
- ¼ teaspoon salt
- ¼ cup sugar
- 1 teaspoon chopped fresh thyme
- 7 tablespoons unsalted butter, cold and cubed
- ¼ cup cold milk beaten with 1 egg yolk
For filling:
- 1 cup cherries, pitted and halved
- 2 ripe plums, pitted and sliced ½ inch thick
- ¼ cup sugar
- 1 tablespoon fresh lemon juice
- 2 tablespoons hazelnut meal/flour
- 1 egg white
- 1 tablespoon heavy cream
- Turbinado sugar for sprinkling
Instructions
- To make crust: combine all the ingredients except milk in a food processor. Process a few times until butter is about the size of a pea. With processor on, slowly drizzle in ice cold milk to mixture, one tablespoon at a time, until dough comes together. Remove dough from bowl and pat down into a disc. Wrap in plastic wrap and chill for at least an hour.
- Meanwhile, make the filling. In a large bowl, combine the cherries, plums, sugar and fresh lemon juice.
- When dough is chilled, roll out on a well floured surface into a 12-inch circle. (I rolled mine on a well floured parchment to make transfer easy). Transfer to a baking sheet. Sprinkle hazelnut meal into the center of crust.
- Spoon the fruits into the center of the crust, leaving 2-3 inch borders. Fold up the sides, gently tucking in over the fruit in a folding/pleating pattern. Transfer dough to freezer and let chill for 15 minutes.
- Preheat oven to 375 degrees F. In a small bowl, whisk together the egg white with heavy cream to make an egg wash. Remove galette from freezer and brush dough with egg wash. Sprinkle dough with turbinado sugar. Bake galette for 50-55 minutes or until crust is golden and juice from the fruit runs out. Let cool before serving warm.

YES for sending off your manuscript! That must be such a weight off your shoulders. I’ve been so lazy about getting my final experiments done for mine…I need your motivation! Maybe I just haven’t been eating ENOUGH galettes?! I have some plums on my counter so I must change that with this beauty!
It feels so good, like a weight gone indeed. I dread the reviews though…but that’s another thing in a few weeks. The summer make sit hard to do experiments. But I hope you push through with the last ones you have left!!
This sounds (and looks) delicious! I love the unique flavor combination you’ve come up with.

Love how rustic this looks and your photos def has that mood thing going on which is cool. I can’t believe summer is almost over either. Funny, today I saw 2 people posts things on social media about pumpkin. Get ready, the pumpkin craze is coming sooner than you think!
Oh noooo, I cannot start thinking Pumpkin yet!
You are a galette fiend! I love it. And oh dang, good luck on the submission! I’m supposed to be writing/revising and submitting my first article to a journal soon….us grad school folk should really chat about this 😀 do you know any others of our species?
Ala, I am relieved but not really because I know it will be coming back with a ton more work. But for now, I’m focusing on enjoying the next few weeks. Oh I know we need to chat about this indeed. Joanne of Eats Well with Others is also a PhD student. She understands lol!
And now you get to enjoy the rest of your summer now that your paper is finished! This galette is too perfect with the homemade crust and all those beautiful stone fruits! Love this Zainab!

Thanks Chelsea! I tried a new style of photos and was happy the way they turned out.
The filling sounds so good! Just irresistible!
Indeed!!
Congrats on getting your paper off to the editors! Remember, they aren’t going their job if they don’t find something for you to change/improve. 🙂 At least that’s what I kept telling myself! This galette looks delicious, btw!
You are so right David but I’m still worried of all the corrections they will ask for!! Thanks 🙂
I love the inspiration behind this gorgeous galette and beautiful vintage images! I am making my first galette in the next week. Wish me luck! I hope it turns out as lovely as yours!
You don’t need luck girl! U are a super baker so it will be easy 🙂
I made galettes with Bob’s Red Mill hazelnut flour, too and OMG — so good! Love the combo of cherries and plums going on up in here.
So good! I’m addicted to the hazelnut flour now. I thought almond flour was my best friend with all the macarons I made but nooo was wrong lol! Thanks Steph!!
Congrats on finishing and sending your paper off! I remember how that feeling of working my ass off over a paper. There’s always more that can be done to make it better but at a certain point, it’s like “I’m done! I can’t do anymore.” I’m sure it’ll be well received because you’re brilliant. As for this cherry plum galette – wow! It’s gorgeous, Zainab. I love the rustic crust and kudos on combining two fruits that usually aren’t paired together. I have both cherries and plums at home right now. If I’m not exhausted from the work day, I might have to recreate this tonight. And trust me, getting outdoors isn’t all that it’s cracked up to be! I’ve been walking Abby every day and I’m being eaten alive by mosquitos. It sucks because I’m allergic so the bites swell up. I’m trying to ignore the incessant itch and just enjoy the sunshine 🙂
Oh my gosh nooo! Mosquito bites are the worst. I grew up in rainforest Africa and know that they can be painful too. Wear some sleeves and pants girl!! Also thank you so much for the swet comment. The paper was definitely a huge pain and I feel a lot of weight off my shoulder now. Although it will be coming back for revisions I’m glad we made the first huge step!! Hope you can try this combo soon! It’s also amazing in smoothies. I threw a plum and some cherries in my morning smoothie and loved it!
This is both lovely and looks SO delicious!! I like that it uses Hazelnut Flour too…great! I totally want to try it!
Thank you Diane!!
I’ve never tried hazelnut meal! That would be so fun to work with. You did a beautiful job with this galette! They are one of my favorite things to make, especially with new fruit pairings. Wow, four weeks of revising? You go girl! I hope you get the rest of the summer off!
You will love hazelnut meal!! I saw how you loved almond meal so this will be a favorite soon 🙂 Thank you!!
This recipe sounds fabulous, and with so little sugar in it, I can easily convert it to a sugar free recipe which will be a good thing for my diabetes AND my sweet tooth! Thanks so much for sharing!
Yes Penney you are so right!! Hope you enjoy it!
I LOVE hazelnut so naturally I have to try this. Perfect time of year making it with cherries. Yum. Yum!!!!
Your galette is gorgeous. I love the flavor of hazelnut…I really should not be reading this at 1 am and thinking about baking!
As always…your desserts look positively scrumptious my dear! So glad to have you participate in our Foodie Fridays Party!!! I have chosen you as one of my faves 🙂
Thanks Mila!
