Chocolate Marshmallow Rice Krispie Treat Ice Cream
I’m taking some time off the next few weeks to enjoy time with our little bundle of joy. While I’m away, I’ve scheduled some recipes here and there to share with you and I’ve also asked a few of my amazing blogger friends to fill in with some guest posts.
Today, my boo Allie from Baking A Moment is here to share with you this chocolate marshmallow rice krispie treat ice cream (just WHOA!!). Allie is my dessert twin and kindred spirit. We hit it off years ago when we both started blogging and she has been an invaluable friend (both online and offline). I don’t know how I can ever thank her for always being there for me especially as I started this journey of motherhood. Maybe the next time we are together I could bring this ice cream?
Helloooo, Blahnik Baker readers! It’s Allie here, from Baking a Moment! I am so happy to be chatting with you today. As I’m sure you already know, our friend Zainab has a brand-new little bundle of joy and he needs lots of cuddles, so while she is busy with that we are going to talk ice cream.
Specifically, this knock-you-dead Chocolate Marshmallow Rice Krispie Treat Ice Cream. I’m not even kidding. I’m totally dead right now. This ice cream murdered me.
As a dessert blogger, I make all kinds of recipes. And most of the time I’m not making them with myself in mind. I’m trying to please a lot of people. Husbands, kids, moms and grammies who want to utilize whatever is in their pantry or fruit bowl… but this- this one was for me.
When it comes to ice cream, there are two roads I typically go down. If I find myself standing in front of that big board with all the yummy options, I look for a) something with crunchy bits in it, or b) chocolate marshmallow. I LOVE chocolate marshmallow, especially if it’s on a cake/wafer cone. I can never say no to it, especially if it’s the kind with the gooey marshmallow sauce, rather than those sponge-y little mini marshmallows.
But a chocolate marshmallow ice cream that also has crunchy bits in it??? Oh heck yes.
I’ve played around a bit with no-churn ice creams this summer and they are super-simple and really tasty, but for this recipe it had to be the real deal. I’m sorry, but nothing can beat the richness you get with an authentic frozen custard, made with fresh eggs and cream. And the deep, rich chocolate flavor in this ice cream is sooo decadent! There are two kinds of cocoa here, plus melted chocolate, and it is seriously the bomb.
I used this ice cream maker attachment and I could not believe how fast it was. I’m not kidding- FIVE minutes and it was done.
Chocolate Marshmallow Rice Krispie Treat Ice Cream
Ingredients
- 1/2 cup milk (I used 1%)
- 4 large egg yolks
- 1/2 cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons dark cocoa powder
- a pinch of kosher salt
- 2 ounces semisweet chocolate, melted
- 1 1/2 cups heavy cream, cold
- 2 teaspoons pure vanilla extract
- approx. 6 ounces Homemade Marshmallow Sauce
- about 1 cup Rice Krispie Treat cereal
Instructions
- Pour the milk into a small pot and place over medium heat. Warm and do not let it boil.
- Whisk the egg yolks, sugar, cocoas, and salt together in a medium bowl. When the milk is hot and steamy, and there are small bubbles forming around the edges, slowly dribble it into the egg mixture, while whisking, to warm the yolks. When all the milk has been added, transfer the mixture back to the pot, add the melted chocolate, and continue to cook, over low heat, until the mixture has thickened slightly.
- Strain the custard through a fine-mesh sieve, into a heat-safe bowl. Stir in the heavy cream and vanilla extract. Cover, and refrigerate overnight.
- Churn the ice cream in a chilled ice cream maker, following your manufacturer's instructions.
- Spread about a quarter of the chocolate ice cream in the bottom of a loaf pan. Drizzle with 2 ounces of Marshmallow Sauce, then top with 1/3 cup Rice Krispie Treats cereal.
- Repeat, until all the components have been utilized and the loaf pan is full.
- Cover the surface with plastic wrap and freeze solid.
