Coconut Apple Caramel French Toast

I apologize for posting a brunch recipe this late in the day but this coconut apple caramel french toast will be perfect for the weekend. It is a mouthful but it is seriously crazy good with a flavor combination that I did not expect to be that good. Coconut + apples + caramel + crunchy toasted bread = a delightful breakfast or lazy brunch.
Let’s break it down so you can see why there are several reasons why I love these.
First, it’s french toast. There’s nothing like this juicy breakfast treat. My classic French toast recipe is a great one to start with however if you would like to upgrade or play with flavor combinations, this here is the one for you.
Second, we got coconut cream mixed in with the milk and warm spices of cinnamon and nutmeg. Just a great combination for fall.
And finally, the toast is topped with caramelized apples and caramel sauce. A winning combination all around.
We don’t make french toast as much as we should but after we indulged in this caramel delight, we all agreed we need to add French toast to our weekend brunch rotation.

Coconut Apple Caramel French Toast
Ingredients
For the french toast:
- 3/4 cup milk
- 1/4 cup coconut cream
- 4 large eggs
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- Pinch of salt
- 10 slices french toast bread (or any thick sliced bread)
- 6 tablespoons unsalted butter, for cooking
For the topping:
- 2 tablespoons unsalted butter
- 1 tablespoon brown sugar
- 2 medium apples, cored and sliced
- 1/4 cup homemade caramel sauce (use this recipe)
Instructions
For the topping
To make the caramelized apples, melt the butter and brown sugar in the 10″ Skillet from your KitchenAid® Stainless Steel 10-Piece Set heated on the cooktop of your Electric Convection Slide-In Range. Toss in the sliced apples to the butter mixture, stirring occasionally, until browned and starting to caramelize. Remove from heat and set aside until ready to serve.
For the french toast
In a large mixing bowl, whisk together the milk, coconut cream, eggs, brown sugar, cinnamon, nutmeg and salt until well combined. Pour into the largest dish from your KitchenAid® 4-Piece Nesting Casserole Set.
Heat your KitchenAid® 10″ Skillet on the cooktop of your Electric Convection Slide-In Range over medium heat. Add butter to the Skillet and allow to melt. Dip the bread into the egg-milk mixture for a few seconds and allow the milk to soak through, making sure you soak both sides of the bread. Transfer to the hot butter in the Skillet and cook until golden brown on the bottom, then flip over to the other side. Flip the toast and cook until golden brown on the opposite side. Remove from Skillet.
Top with caramelized apples and a drizzle of caramel sauce.
