Coconut Cassava Bars {Gluten-Free}
Coconut cassava bars are a chewy, sweet, gluten free dessert, perfect for any occasion! Made with a cake base that is soft, flavorful and chewy, the bars are topped with a thick coconut layer.
Happy Monday friends! I hope you all had a great weekend and are ready for the countdown to the holidays.
I spent my weekend in snowy Minneapolis at a Pillsbury blogger holiday event. A whole day of baking with fellow bloggers in the Pillsbury Kitchens and meeting the wonderful people behind Pillsbury. It was freaking amazing and once I get my act together, I will share with you all the details, pictures and holiday cookies we baked on Wednesday (pinky swear).

I just did a series of African recipes on my blog last week…too bad I didn’t know about this recipe before. My family is from the Caribbean and we use cassava a lot. I can’t wait to try this recipe.
