Right at the end of summer…the last week of it that is, was when I felt like I was on vacation!!
These matcha coconut chia popsicles have been a great companion as I frolic around. Have you tried matcha green tea powder? It is finely ground green tea leaves with lots of health benefits. I have been experimenting with it ever since this Matcha Genoise Cake a few months ago. But it wasn’t until recently that I started using organic matcha in non-baked goods.ย It’s a great addition to smoothies, ice tea lattes and of course frozen popsicles! Given the energy boosting ย benefits of organic matcha, it is no wonder, these popsicles have been my BFFs this past week.
I’m going to keep this short and continue with my ย frolicking status this week since it’s really short lived. Of course I will be back to my senses soon and I will not be saying TGIF this week but until reality kicks in…I will be relaxing in the sun with one of theseย healthy green popsicles.
Matcha Coconut Popsicles
These matcha coconut popsicles are aย refreshingly healthy green popsicle that will cool you down as the summer heat subsides!ย
Ingredients
- 13.5 ounces coconut milk (1 can)
- 2 teaspoons matcha green tea powder
- 2 tablespoons sweetener (honey, agave nectar, maple syrup)
Instructions
- In a medium bowl, whisk all the ingredients. The matcha powder will take a few minutes to get into solution. Pour the mixture into your popsicle molds and freeze for 30 minutes.
- Insert popsicle sticks into molds and freeze until frozen, a few hours to overnight.
- To unmold, run under warm water for 30 seconds and release from the mold.
