The strawberry cheesecake part was great! The graham cracker crust was comically thick in my 9 inch pan even with pushing up the sides. Weird. Will def make again but half the crust part! Perfect summer treat – no oven, plus fresh strawberries!
I did whip the heavy cream to medium peaks before mixing into the cream cheese. I added a small portion of the sugar to the cut up strawberries and blended the rest into the cream cheese along with the vanilla extract. Then mixed the whipped cream in and added the strawberries. I had enough volume to fill 18 of the little Keebler mini graham cracker crusts with an added 1/2 strawberry on each for a garnish.
