Roasted Fig & Ginger Ice Cream
A dairy-free and vegan ice cream combining the wonderful flavors of roasted figs, coconut and ginger.
TGIF!!! This week has raced by really fast and this girl is still running behind on everything she has to get done by the end of the day today at work. So here is a quick and sweet note on this wonderful roasted fig & ginger ice cream!!
Remember when I went to Boston a few weeks ago? (See it here!) And I told you I bumped into a farmer’s market as I was walking around the city? Well, I bought some figs (and limes since there is a shortage!!) and I was so excited because I’ve been hunting figs and rhubarb at my local farmer’s market for weeks and could not find neither. When I returned from my trip, the first thing I made with my figs was this ice cream!! It’s a dairy-free, vegan (if you use agave instead of honey) and gluten-free treat that will just make your tastebuds dance for joy!
Why? Because, roasting figs with brown sugar, ginger and lemon zest does something wonderful to them and it extracts the bold flavors of the fruits. I blended this roasted puree with some coconut milk and honey (or agave) to make the ice cream base. That’s right, no artificial sugars either. It is so incredibly creamy and delicious, I need to just give you the recipe so you can try it!
You have to head over to my friend Julie’s blog, This Gal Cooks, for the recipe. I am sharing this ice cream with her readers today as she studies for her GRE exams. Get the recipe HERE!
I hope you have a great weekend ๐
Going to check out the recipe now! I love figs and I can’t believe this is vegan! It looks so creamy!
I’m so jealous you found fresh figs! I have been trying to get my hands on them for months. Love this ice cream flavor, I know how good roasted strawberries are in ice cream so I bet it’s just as good with figs!
Love the flavors in this Zainab! Thanks for sharing with us at Best of the Weekend – will be featuring these tomorrow night!
Thanks Deb!!
This sounds great!! I absolutely love figs and ice cream, so this is perfect for me! It isn’t actually vegan because of the honey, but that can easily be fixed by using something like agave nectar ๐ ๐
I love figs and ginger! This ice cream sounds amazing!
That is such a creative duo of flavours that you came up with for this ice cream, Zainab. And what really hit me was the beautiful colour! It’s to-die-for! I’ll head on over to Julie’s blog, which of course I love! ๐
Roasting figs and brown sugar sounds wonderful. Also wonderful is this ice cream. Yes, please!
This ice cream looks so good! Heading on over. Not to be a total creep but you could be a hand model ๐ hahaha
What a wonderful flavor combination. Can’t wait to try it.
I love how creamy it looks. I need to get around to making some ice cream. Yummy! Happy Friday!
Ok, this looks incredible Zainab. First off the pictures are gorgeous and love the color the figs gave the ice cream. Need to try this asap, love figs!
Fresh ripe figs are the best! I love this unique combination of the figs and ginger, and the color is beautiful! Pinned!
