This recipe uses aquafaba (the juice from a can of chickpeas), an egg-free alternative to egg whites. I like using aquafaba when prepping this drink ahead.

It works beautifully and still provides the signature thick foam that blankets the top of the drink. Egg whites could still easily be swapped for aquafaba 1:1. I’ve included tips for both egg white and aquafaba in the recipe notes.

This cocktail is an absolute delight and will surely be a favorite at your next gathering!

Two rum sour cocktails.

If you prefer egg whites, you can do so easily by swapping them for the aquafaba 1:1. A large egg has about 1 ounce of egg white.

What is aquafaba?

Aquafaba is the drained liquid from a can of chickpeas. It is an excellent alternative to egg whites.

Making it ahead

If you’d like to make these rum sours in advance (i.e., more than 48 hours ahead), it’s ideal to use aquafaba. Egg whites would not be safe to consume after that time. When making ahead, I recommend leaving the lemon juice out of the mixture until you’re ready to shake and serve.

What can I use instead of coconut cream?

The coconut cream gives this spiced rum sour a rich, creamy flavor and texture, but you may use regular simple syrup, honey, or agave nectar in its place if you prefer
