Let’s talk about these dips. Both of these dips are full of cheddar cheese flavor. The homemade queso dip is packed with yellow onion, jalapeño pepper, fresh tomato, green chilies, and some garlic. If you haven’t tried making queso before, it is easy, and everyone will love it.
The beer cheddar cheese dip is made with beer and sharp cheddar cheese, inspired by a recent cheese box Cabot Creamery sent me. The pairing is delicious and the ultimate dip for dipping pretzel bites. Good luck having any leftovers when you serve this.
These dips would also be great for serving on movie nights, at parties, or when you crave a cheesy dip.

How to Make a Game Day Charcuterie Board

Assemble a large board with all the snack items.
How to Store the Dips
If you have leftover dip, store the dip in airtight containers in your refrigerator for up to 5 days. Reheat the dips in a saucepan, whisking until warmed through. You can add some extra milk or half & half to thin the dip if it is too thick.

Homemade Queso Dip
Homemade Queso Dip
This homemade queso dip is perfect for parties and game nights. It is filled with simple ingredients, is easy to make, and tastes amazing!
Ingredients
- 2 tablespoons unsalted butter
- 1 small yellow onion, chopped
- 1 small jalapeño pepper
- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1 (7-ounce) can diced green chilies
- 1/4 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2/3 cup half and half
- 8 ounces sharp cheddar cheese (NOT shredded)
- 1 tablespoon cornstarch
- ¼ cup coarsely chopped fresh cilantro
Instructions
- In a large saucepan set over medium heat, melt the butter.
Add the onion and jalapeno. Cook until soft, about 3-4 minutes. - Add in the garlic and cook until fragrant. Add in half of the tomatoes and green chiles. Cook until tomatoes soften.
- Add the cumin and season with salt and pepper. Add in the half and half and bring to a low simmer.
- Reduce heat to low and add in the cornstarch and the shredded cheese, ½ cup at a time, constantly stirring until all the cheese is melted and the sauce is thick and smooth, about 3 minutes.
- Remove from heat and transfer the dip to a serving bowl. Top with the remaining tomatoes, cilantro, and jalapeno peppers.

Beer Cheddar Cheese Dip
Beer Cheddar Cheese Dip
This beer cheddar cheese dip will be the star of the party with its smoky beer cheesy dip flavor. It's easy to make, creamy, and perfect for any party or game night.
Ingredients
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- ½ teaspoon garlic powder
- ¼ teaspoon smoked paprika
- ¼ teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1 cup beer
- ¾ cup whole milk
- 10 ounces seriously sharp cheddar cheese (about 2 1/2 cups), grated (do not use pre-shredded cheese)
Instructions
- Melt the butter in a medium saucepan over medium heat. Add all-purpose
flour, garlic powder, paprika, salt, and Worcestershire sauce and whisk until
the flour is thoroughly combined. - While constantly whisking, slowly pour in beer and milk. Bring to a simmer over medium heat, whisking often. Continue to cook, often whisking, until thick enough to coat the back of a spoon for about 5 minutes.
- Reduce the heat to low. Add the grated cheese a handful at a time, whisking between each addition, until the cheese is fully melted before adding more. Serve immediately.
