This no-bake cheesecake bar recipe uses fresh strawberries and a few simple ingredients.

How to Make Strawberry Cheesecake Bars

Start by making the crust. Line an 8×8 inch baking pan with parchment paper and set aside.

Mix the golden oreo crumbs, melted butter, and granulated sugar until well combined. It should have the texture of wet sand.

Firmly press into an even, flat layer on the bottom of the baking pan.

Bake for 5 minutes and set aside to cool. Alternatively, you can skip the baking and freeze the crust in the freezer for about 30 minutes. 

Next, make the strawberry cheesecake filling. Add the chopped strawberries to a food processor, and process until smooth. Set aside.

In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth and creamy.

Add the strawberries and mix until thoroughly combined.

In a separate mixing bowl, beat the heavy whipping cream until stiff peaks form.

Fold the whipped cream into the rest of the cheesecake mixture.

Spread the mixture evenly over the crust.

Ingredients

Golden Oreo Crust

  • 1 ½ cups golden oreo crumbs
  • 4 tablespoons butter, melted
  • 2 tablespoons granulated sugar

Strawberry Cheesecake

  • 1 cup strawberries, chopped
  • 8 oz cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream
  • Strawberries for garnish

Instructions

For the Graham cracker crust

  1. Preheat the oven to 350° F. Line an 8x8 inch baking pan with parchment paper and set aside.
  2. Mix the golden oreo crumbs, melted butter, and granulated sugar until well combined. It should have the texture of wet sand.
  3. Firmly press into an even, flat layer on the bottom of the baking pan.
  4. Bake for 5 minutes and set aside to cool.
